Lavender Cupcakes

Lavender Cupcakes

Makes 24 mini muffins

 

For the Cupcakes:

½ cup sugar

1 ½ tsp. dried lavender flowers

8 T butter (1 stick) room temp.

2 large eggs

1 cup all purpose flour

1 ½ tsp baking powder

½ tsp salt

1 tsp. vanilla extract

2 T milk

1 tsp. grated lemon zest

 

Preheat oven to 350 degrees F. and grease a muffin pan.

Place the sugar and lavender flowers in a food processor and process about a minute.

Place the lavender sugar in the bowl of a stand mixer or in a food processor.  Add butter and beat till light and fluffy.  Add the eggs and beat well after each addition. Sift together flour, baking powder and salt.  Mix into butter mixture, then add milk, vanilla, and lemon zest and mix till just combined.  Spoon the batter into the muffin tin and bake approx. 12-15 minutes until a toothpick inserted into center comes out clean.  Let cupcakes cool completely before frosting them.  After frosting, garnish with lavender flowers if desired.
