Seasoned Meatballs with Lavender

Seasoned Meatballs with Lavender

(As served at Lavender Hill Farm open house 7/7/07)

Makes about 120 small meatballs.

 

2 lb ground lamb*

2 lf ground beef chuck

10 medium cloves garlic, minced

2.5 cups oatmeal

1/3 cup fresh thyme (may substitute 1/3 as much dried thyme)

1.5 cup fresh chopped cilantro

2T ground dried lavender

½ cup lemon juice
1Tablespoon salt

4 eggs

2-3 squirts Worcester sauce (don’t overdo it)

 

Mix all above ingredients well.

Use a melon baller to make relatively uniform sized meatballs. Roll between your hands to shape.

Brown meatballs in a large skillet with a little olive oil. When browned, simmer in their own juices for a few minutes till cooked through.
